Let’s talk about these Vegan and gluten-free chocolate cookies.
I will admit upfront that I ate all of these cookies the day that I made them.
I absolutely could not stop myself. They are really too yummy.
Moreover, they are easy to make, they need few ingredients and they are healthy!
What you will need to make these delicious Chocolate Cookies?
3/4 cup of gluten-free flour
1/4 cup of coconut flour
2/4 cup of coconut sugar
1/3 cup of melted coconut oil
1/3 cup of vegetable milk ( I use coconut milk)
1 teaspoon of vanilla extract
1 teaspoon of salt
1/2 teaspoon of baking soda
1/4 of cup of Raw Cacao Powder
Vegan Chocolate chunks ( I use a Lindt Chocolate bar and I cut it into small pieces)
In a large bowl mix all the ingredients. Create with all the ingredients a soft dough and let it chilling for some minutes.
Preheat oven to 350°F. Create cookies with your hands and bake them for 11-15 minutes, or until the edges are a light golden and the tops are no longer glossy. Let cool on the cookie sheets at least 10 minutes before removing.
Usually, before eating I put them in the fridge for at least 20 minutes.
